North Shore Distillery, located just outside of Chicago, is a boutique distillery making small-lot spirits such as this award-winning gin.

Tasting Note
Gold Medal. Clear with a platinum cast. Vibrant aromas of fresh herbs and spices, piney juniper, and twisted lemon peels jump from the glass. A silky entry leads to a fruity-yet-dry medium-full body of bold cracked juniper berry, pink peppercorns, lemon curd, clove, and pastry frosting flavors. Finishes with a long interplay of resiny juniper, sweet citrus and brown spices. A superb gin that virtually bristles with fresh, 3-D flavors. Very impressive! Score - 95. ½ oz Dry Vermouth
Dash of Orange Bitters

Can't go wrong with a classic. Swirl vermouth in glass; discard. Garnish with blue cheese olives or a twist. Also delicious with North Shore Vodka, and with more vermouth if you like it that way. We recommend Noilly Prat or Vya vermouth.

Organic Cachaca Shakes Up Ontario Cuca Fresca!

Drink Recipes

Cuca Fresca Caipirinha (served in a 10 oz. rocks glass)

2.5 oz. Cuca Fresca Premium Cachaça

1 lime, cut into 8 pieces

2 Tbsp. superfine sugar

Place the quartered lime in a small shaker and add sugar. Muddle lime and sugar together in the bottom of the shaker. Fill the shaker to the top with ice. Fill with cachaça and shake. Garnish with a lime slice and piece of fresh sugarcane.

Miami Iced Tea (served in a highball glass)

3 oz. Cuca Fresca Premium Cachaça

2 oz. sour mix

2 oz. Coca-cola

1 oz. orange juice

Pour all of the ingredients into a tall, ice-filled mixing glass. Cover and shake well. Pour, without straining, into a highball glass. Garnish with a lemon slice and straw.

Tanga (served in a martini glass)

1.5 oz. Cuca Fresca Premium Cachaça

1 oz. Cointreau

1 oz. Cranberry Juice

.5 oz. Fresh Lime Juice

Splash of simple syrup

Combine all ingredients in a shaker filled with ice, shake well and strain into a chilled martini glass, garnish with a fresh lime slice.

Brazilian Mojito (highball glass)

2 oz. Cuca Fresca Premium Cachaça

1 lime, quartered

2 teaspoons superfine sugar

3 fresh mint sprigs

Club soda, to top

Place lime, mint sprigs, and sugar in a highball glass and muddle together in the bottom of the glass. Add crushed ice and Cuca Fresca Cachaca. Fill the rest of the glass with club soda and stir. Garnish with lime slice and piece of fresh sugarcane.

Rio Night

1.5 oz. Cuca Fresca Premium Cachaça

¾ oz. Cointreau

½ oz. Fresh Sour Mix

Two Slices of Fresh Orange

Splash Orange Juice

Splash Cranberry Juice

Carambola to garnish

Combine all ingredients in a shaker filled with ice,

shake well and strain into a chilled martini glass, garnish with a carambola slice.

Cuca Cola (highball glass)

2 oz. Cuca Fresca Premium Cachaça

Cola

Fresh lime juice, to taste

Pour cachaca into a highball glass filled with ice. Top with cola and add fresh lime juice to taste. Garnish with a lime slice.

This attractive, olive-gold Sirène is a supremely refined example of über-trendy Absinthe. Coming this March to the LCBO is Sirène Absinthe Verte, a complex, rich spirit crafted by an award-winning American artisan distillery. Sirène Absinthe Verte is the first U.S-made absinthe available in the Midwest since the spirit was banned in 1912.

Sirène is made with the traditional trinity of absinthe botanicals - anise, fennel and grand wormwood, along with a propriety blend of additional herbs to create richness and depth. Sirène embodies the rich traditions of absinthe, and is handmade with exacting precision by North Shore Distillery in Illinois . Let Sirène’s beautiful nuance, flavour and aroma tempt you.

Enjoying Sirène Absinthe

Absinthe is traditionally enjoyed in a drip. Pour about an ounce and a half of absinthe in to an absinthe glass or wine glass. Then place an absinthe spoon on the glass and place a sugar cube (optional) on the spoon. If you do not have an absinthe spoon, you can use a slotted spoon or add a dash of simple syrup. Then drip ice cold water over your sugar cube and into the absinthe. You can use an absinthe fountain or simply a carafe of ice water. We recommend having your first drip with three parts water and one part Sirène. Then adjust the water next time to your personal taste.
